Chef Vincenzo Vottero, a Michelin-starred chef from Bologna, brings over 40 years of experience to UMMO as Executive Chef. 

Known for his creative approach to Italian cuisine, Chef Vottero expertly blends traditional flavors with modern techniques, creating dishes that are both nostalgic and innovative. 

His career began at the Istituto Tecnico Alberghiero Palas Hotel in Rimini and included work in prestigious Michelin-starred restaurants across Italy, including Gualtiero Marchesi and Cordon Bleu of the Grand Hotel Elite Bologna. 

Chef Vottero has also owned the Michelin-starred Antica Trattoria del Reno and Vivo, a seafood-focused concept. At UMMO, he introduces his signature dishes, such as Burrata Tortelloni and Ultravioletto risotto, showcasing his passion for high-quality Italian ingredients and imaginative cuisine
